Job Summary:
The Fish Processing Supervisor will be responsible for overseeing the daily operations of processing, ensuring the highest quality standards are met, and maintaining the safety and efficiency of the production line. The supervisor will manage a team of workers, coordinate with management, and ensure all processes are compliant with local, national, and international food safety standards. This position demands specialized knowledge in the handling, processing, and packaging of eel products.
Key Responsibilities:
- Supervision & Leadership:
- Lead and manage a team of processing workers, ensuring proper workflow and task allocation.
- Train new employees on processing techniques, safety protocols, and best practices.
- Monitor staff performance, providing feedback and ensuring adherence to company policies.
- Processing Operations:
- Oversee stages of processing, including gutting, cleaning, filleting, smoking, or freezing.
- Ensure that processing equipment is properly maintained, sanitized, and calibrated.
- Implement and monitor quality control checks to ensure product consistency and high standards.
- Optimize production efficiency by reducing waste and downtime while maintaining quality.
- Health & Safety Compliance:
- Ensure compliance with all food safety regulations, including local food hygiene standards.
- Conduct regular safety audits and inspections to minimize risks to employees and product contamination.
- Develop and implement corrective actions for any safety or quality concerns.
- Inventory & Supply Chain:
- Monitor inventory levels of , packaging materials, and processing supplies.
- Coordinate with the procurement team to ensure timely ordering of raw materials and supplies.
- Quality Assurance:
- Inspect products to ensure they meet size, weight, and appearance standards.
- Collaborate with the quality control team to ensure processing meets or exceeds customer expectations.
- Address and resolve any quality-related issues or customer complaints in a timely manner.
- Documentation & Reporting:
- Maintain accurate records of production metrics, employee attendance, and equipment maintenance logs.
- Prepare daily, weekly, and monthly reports on processing performance, quality, and safety.
- Assist in developing process improvements to enhance productivity and product quality.
Qualifications:
- Education:
- High school diploma or equivalent required; a degree in Food Science, Fisheries, or a related field is preferred.
- Experience:
- Minimum of 3-5 years of experience in fish or seafood processing, with at least 1-2 years specializing in eel processing.
- Prior experience in a supervisory or managerial role is required.
- Skills:
- Strong knowledge of eel processing techniques, including handling, cutting, and preservation methods.
- Familiarity with food safety regulations and industry standards
- Excellent leadership, communication, and problem-solving skills.
- Ability to work in a fast-paced, physically demanding environment.
- Proficiency in basic computer software, including MS Office and inventory management systems.
Physical Requirements:
- Ability to stand for long periods of time and work in a cold environment.
- Manual dexterity for handling and processing eels.
- Ability to lift and move heavy objects (up to 50 lbs).
