Job Description:

We are looking for an experienced butcher/meat cutter with deep knowledge of traditional cuts used in preparing authentic Mexican dishes like barbacoa, carnitas, and tasajo. The ideal candidate will have experience handling native Mexican ingredients and working in a fast-paced environment while maintaining high quality standards.

Work Conditions and Physical Capabilities

Attention to detail; Hand-eye-co-ordination. Capable of lifting up to 45 kg.

DUTIES:

  • Cut, trim, bone, and prepare custom and standard cuts of beef and pork according to customers' orders or company requirements
  • Prepare specialized cuts of beef and pork for traditional displays or delivery, ensuring high-quality presentation
  • Shape, lace, and tie roasts and other cuts of beef and pork; may wrap or package fresh or frozen meats
  • Maintain and manage meat inventory, ensuring freshness and proper stock levels according to customer demand
  • Follow all Hazard Analysis and Critical Control Points (HACCP) standards and Canadian Food Inspection Agency (CFIA) guidelines for handling and processing meat
  • Ensure proper storage of beef and pork to maintain product quality and prevent spoilage
  • Train and supervise other meat cutters in proper techniques for handling, cutting, and storing beef and pork

 

Additional Skills:

  • Extensive knowledge of traditional Mexican meat cuts and specialized techniques to preserve authentic flavors
  • Experience with native Mexican ingredients such as dried chiles and nixtamalized corn, requiring careful handling during preparation
  • Ability to work in a fast-paced environment while maintaining high standards of quality
  • Ability to collaborate closely with chefs to ensure the authenticity of cuts and preparations foundational to Mexican dishes
  • Knowledge of the cultural significance of Mexican cuisine, with the ability to apply this understanding to meat selection and preparation
  • Ability to teach and train team members, ensuring quality and authenticity of meat handling techniques across the team
  • Bilingual in English and Spanish is a plus
